Crab or Chicken Stuffed Avocados
Avocados are currently quite cheap, and also delicious, and I bought a multiple pack before I decided to make these.
I also had a packet of crab in my fridge and decided the two would go very well together. This recipe would also work well with pulled chicken and especially if you have some chicken left over from another meal.
It also requires no cooking, and is great as an entre, though I ate it as a main.
I had to use the whole packet of crab and it was way too much for the one avocado, so either buy less crab-meat, or more avocados!

Serves: 2 as entre
Ingredients
1 large ripe avocado,
About ¾ cup (I used 240 g) crab-meat, cooked
¼ cup celery, chopped finely
1 spring onion, chopped
1 tsp lemon juice
2 tbsp mayonnaise
1 hard boiled egg
2 - 3 green olives
For the dressing
½ cup mayonnaise
1 - 3 tsp chili sauce (I used Sriracha)
1 spring onion, chopped
1 tbsp sliced olives
1 tsp lemon juice
1 tbsp Cornichons, or similar
½ tbsp parsley, chopped
½ tsp paprika powder
Another hard boiled egg, grated (optional)
Method
Peel the avocado and cut in half lengthwise (you COULD leave the peel on as I did, making it easier to handle).
Put some lemon juice on this to stop it discolouring.
Put each half on the serving plates.
Mix the flaked crab-meat, celery, spring onion, lemon juice, and mayonnaise.
Add a dash of salt.
Fill each avocado with this crab mixture.
For the dressing
Mix the dressing ingredients together.
Add this dressing on to the top of the crab.
Add the hard boiled eggs, cut into pieces or halves or quarters, and the 2 or 3 olives.
Sprinkle with a bit of paprika.
I had a lot of both of these mixtures over, so ate it on crusty toast for lunch the next day.
