Cranberry Baozi

Baozi is the name the Chinese give to steamed buns that have a filling. Usually it is meat or something savoury, but I went for something slightly sweeter. They also make steamed buns without a filling , which I enjoy with jam. Here I decided to try something that would not require the extra condiment, because it is already inside. Best served warm, you can eat them fresh, or heat up in the microwave.

Preparation Time: 1 hour 45 minutes
Cooking Time: 20 minutes per bun (40 minutes altogether if done in two batches)
Makes: 8 servings

Ingredients
250g white bread flour
1tbsp sugar
1 tsp fast action yeast
1/4 tsp salt
125ml water
  • 8 tbsp cranberry & chestnut sauce

  • Method



  • Mix the flour, sugar, yeast, salt, and water together to form a wet dough.



  • Knead the dough for five minutes, then prove for about an hour.



  • Divide the dough into eight balls, and then roll them out.



  • Place a teaspoon of cranberry & chestnut sauce in the centre of each one.



  • Fold over the edges to close up the bun.
  • Steam the dough balls over a pan of boiling water and simmer for twenty minutes (in batches).
