I made these cranberry biscuits after adapting a recipe for cherry biscotti. The recipe sounded rather fattening, so I reduced the amount of butter, used half the sugar, divided them into rounds, and only baked them once. The result was a sweet and crispy cranberry biscuit with a chewy middle. Based on the brands I used, each biscuit is about 78 calories.

Ingredients
275g wholemeal flour
100g margarine
60g Truvia sweetener (or caster sugar if you prefer)
1/2 tsp baking powder
100g dried cranberries
1 tsp vanilla extract
Method
Pre-heat the oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.
Cream the butter with the sweetener/sugar, and add the vanilla extract.
Mix the flour, baking powder, and cranberries together, then fold into to the mixture to form a dough.
Divide the dough into table spoon sized balls and flatten into rounds.
