I made this as an accompaniment for roast duck that I made over Christmas.
It is very easy to make and far nicer than a bought chutney.
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 1 cup
Ingredients
2 pears
1/3 cup dried cranberries
2 tbsp coconut sugar (or brown sugar)
1 - 2 tsp ginger
1 tbsp cider vinegar
1/8 tsp salt
1/8 ground allspice
Method
Peel, core and chop the pears into small pieces.
Combine the pears, cranberries, sugar, vinegar, salt , ginger and allspice in a saucepan.
Cover, and bring to the boil over a high heat.
Turn the heat to low and simmer for about 10 minutes, covered, or until the pears are tender.
Uncover, and simmer over a medium heat until the chutney thickens.
Cool, and chill until needed.
It can be eaten as an accompaniment to meat, fish, poultry and can be served at room temperature or re heated just before serving.
