This is another of my brunch, or breakfast recipes that is just slightly different to your normal eggs!
I have made the toast into "cups" and put the creamy scrambled eggs into this - delicious. You could take off the crusts and they would be easier to make, however in this instance I did not.

Serves: 1 - 2
Ingredients
35 g cream cheese, softened
2 tbsp milk
2 large eggs
½ tsp chives, chopped
¼ tsp salt
1 tbsp butter
2 slices bread, buttered
Method
For the cups
Butter both sides of the bread.
Push the bread into a muffin pan so that the corners form points.
Bake at 160° fan forced for about 7 minutes or until just starting to brown - do not overcook or they will become brittle.
For the egg
Beat the cream cheese until fairly smooth.
Add the eggs, chives and salt.
Beat it with a fork until it is foamy.
When the butter is hot, pour in the egg mixture.
Cook this over a medium heat, moving the outside edges inwards until the eggs are creamy, but do not overcook or they will become dry.
Spoon the egg into the bread cups, and garnish with extra chives.
