Cream of Mushroom Soup
I needed some mushroom soup for making another recipe and once again, did not want to use tinned soup, so I made my own.
The mushrooms are sauteed with the chicken stock (home made) and to this is added thickened cream and sherry. If you are eating this as a soup, add a bit more cream or milk to make it thinner.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 4 servings
Ingredients
450 g mushrooms, sliced
50 g butter
4 tbsp plain flour
1 litre of [link http://recipeyum.com.au/chicken-soup-using-chicken-frames/ home made chicken stock]
1 chicken stock cube
100 ml dry sherry
200 g thickened cream
Method
Melt the butter in a wok or large saucepan and cook the mushrooms on a medium heat for about 7 minutes.
Add the flour to the top of the mushrooms.
Add a bit of chicken stock - I used my home made [link http://recipeyum.com.au/chicken-soup-using-chicken-frames/ chicken stock] however you COULD use a packet/tin.
Continue adding small bits of the soup at a time, stir until it starts to thicken, and then keep on adding stock till it is all used.
Stir in the sherry and the stock cube, bring to the boil.
Remove from the heat and add the cream.
Stir the cream through.
Blend, if eating as a soup, or use as I have done, in my creamy turkey tortilla bake.
