Cream of Roasted Cauliflower Soup

This is my favourite cauliflower soup recipe. It's easy to make and tastes delicious. I always make a second batch so I have quick and easy ready made lunches.

Preparation Time: 30 minutes
Cooking Time: 10 minutes
Serves: 4

Ingredients
1 large cauliflower
4 cups vegetable or chicken stock
1/3 cup cream
olive oil
salt and pepper

Method
  • Preheat oven to 200C and line a baking tray with baking paper.
  • Roughly cut the cauliflower into large florets and arrange it on the baking tray. Drizzle lightly with olive oil. Roast for 30 minutes or until golden.

  • Place the cauliflower, stock and cream into a blender and blend until smooth.
  • Transfer the soup to a saucepan, season with salt and pepper and add extra cream if desired. Heat over medium heat until the soup is heated through.

  • Serve.

  • Note: You can reserve some of the roasted florets to use as a garnish when you serve your soup.
