Creamy Basil Pesto Gnocchi with Baby Spinach Peas
This fresh-tasting and creamy basil pesto gnocchi makes a great simple, quick and easy dish to cook for the whole family to enjoy.

Ingredients
500g packet potato gnocchi
2 brown onions, halved, thinly sliced
1 cup frozen peas
300ml cooking cream
1/3 cup basil pesto
1/4 cup finely grated parmesan
50g baby spinach leaves
Method
In a pot, bring lightly salted water to the boil. Add in the gnocchi. Remove from the heat when it boils again.
Drain the cooked gnocchi.
Heat oil over medium-high heat. Cook the onion, stirring, for 5 minutes or until soft.
Add in the peas and cream and bring to the boil. Reduce heat to medium-low and simmer for 2-3 minutes or until the mixture thickens slightly.
Stir in pesto and parmesan.
Add the gnocchi and spinach and toss to combine.
Divide the gnocchi among serving plates and serve.
