Ingredients 3 tbs olive oil
2 tbs crushed garlic
1 tbs mixed herbs
2 tsp dried chilli
1 tsp paprika
Salt and pepper
2 brown onions
1 chorizo sausage
1 chicken breast
1/2 red capsicum
2 tins of diced tomatoes
Handful of spinach leaves
1/2 cup of cream
Sautee the sliced onions in the olive oil.
Dice the capsicum and add the garlic and other herb and spices.
Slice the chorizo and caramelise in the pan.
Cut the chicken breast into small chunks and add them to the pan.
Pour in the diced tomatoes and simmer until the chicken is cooked through.
Add the spinach and allow it to wilt.
Lastly, add the cream. Stir and heat through.
Serve with a pasta of your choice or zoodles for a carb free option.
