Creamy Chicken and Corn Soup

Found in most Chinese restaurants this flavoursome soup is quick to make and high on flavour. A hearty soup that will satisfy every time.



Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 6

Ingredients
1 brown onion
1 clove of garlic or 1 teaspoon garlic paste
2 tablespoons olive oil
1 420 gram tin creamed corn
3-4 cups vegetable stock
200 grams diced shortcut bacon
350 grams of cubed chicken tenderloin
2 eggs
pepper

Method
  • Add olive oil, onion, bacon, chicken and garlic to pan and gently fry for 3-5minutes.

  • Add vegetable stock and creamed corn. Bring to the boil and simmer for 10 minutes.
  • Whisk eggs in a small bowl.
  • Slowly pour egg mixture into soup while whisking. The egg will cook as soon as it hits the boiling liquid and create stringy egg trails.

  • Cook for a further minute. Then season generously with pepper.
  • Serve with crusty rolls.
