Creamy Chicken & Asparagus Pasta

A delicious but simple pasta dish.

Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 5 servings

Ingredients
600g chicken thigh
400g asparagus spears (1 tin)
400g linguini pasta
400g sour cream
1 medium onion
1 tbs crushed garlic
1 tbs butter
1 tsp chilli flakes
4 tsp curry powder
1/4 cup grated tasty cheese

Method
Prepare the thighs by getting rid of any skin or fat and slice into medium piece.
While you are making the sauce, boil a large saucepan of water for the pasta.
When the water is boiled add the pasta, stirring occasionally.
Sweat off the chopped onion and garlic in the butter.
Add the chilli flakes, curry powder and pepper and salt and stir through.


Serving Suggestion.

Add the tin of asparagus spears.

To the pan add the chicken pieces and once the chicken is brown combine the sour cream.
Turn down to a gentle simmer so the chicken continues to cook through.

Add the cheese to the sauce.
Once the pasta is ready (will take 12-15 minutes), pour the sauce over the pasta.
Stir well.
Dish into individual bowls and serve with an extra sprinkle of cheese.
