Creamy Chickpea & Broccoli Curry

This creamy veggie curry is a filling and incredibly satisfying dish sure to please even the most stubborn of meat-eaters!

It’s quick and easy to make and will have your kitchen smelling of sweet coconut-y goodness and aromatic spices.



Preparation Time: 5 minutes
Cooking Time: 30 minutes
Serves: 4

Ingredients
1 brown onion, finely sliced
1 teaspoon ground paprika
2 teaspoons garlic, minced
2 teaspoons ginger, minced
2 tablespoons red curry paste
1 can (400g) crushed tomatoes
1 can (400g) chickpeas, rinsed and drained
1 can (400ml) coconut milk
1 head broccoli, cut into florets

Method
Heat a tablespoon of water or olive oil in a large pot and saute onion over medium heat until softened.



Add paprika, garlic, ginger and curry paste, stirring often until fragrant.



Mix through the tomatoes, chickpeas, coconut milk and broccoli, then cover and let simmer for 15 minutes, or until the broccoli is soft.



Serve warm with a portion of steaming brown rice, cooked udon noodles or warmed naan. Top with fresh, finely sliced red chilli or chilli flakes for a spicer dish!
