Creamy Chickpea Broccoli Curry

This creamy veggie curry is a filling and incredibly satisfying dish sure to please even the most stubborn of meat-eaters!

It’s quick and easy to make and will have your kitchen smelling of sweet coconut-y goodness and aromatic spices.



Preparation Time: 5 minutes
Cooking Time: 30 minutes
Serves: 4

Ingredients
1 brown onion, finely sliced
1 teaspoon ground paprika
2 teaspoons garlic, minced
2 teaspoons ginger, minced
2 tablespoons red curry paste
1 can (400g) crushed tomatoes
1 can (400g) chickpeas, rinsed and drained
1 can (400ml) coconut milk
1 head broccoli, cut into florets

Method
  • Heat a tablespoon of water or olive oil in a large pot and saute onion over medium heat until softened.



  • Add paprika, garlic, ginger and curry paste, stirring often until fragrant.



  • Mix through the tomatoes, chickpeas, coconut milk and broccoli, then cover and let simmer for 15 minutes, or until the broccoli is soft.



  • Serve warm with a portion of steaming brown rice, cooked udon noodles or warmed naan. Top with fresh, finely sliced red chilli or chilli flakes for a spicer dish!
