Creamy Cottage Cheese Spinach with Brown Rice

I currently have a lot of spinach growing in my garden and wanted something to use this up.

I decided on brown rice to go with it, and as I also had some haloumi and cottage cheeses left over from other recipes, decided to add these also.

Preparation Time: 20 minutes
Cooking Time: 35 minutes
Serves: 6 as accompaniment - 4 as main

1 cup brown rice
3 - 4 cups chopped spinach
1 clove garlic, crushed
About ¾ cup milk
2 tbsp flour
100 g haloumi (optional)
125 g cottage cheese
Rinse the rice, and cook in 2 cups cold water, and bring to the boil. Cook about 20 minutes and then turn off the heat, put the lid on, and let it absorb more water for about 15 minutes.

Melt some butter in a saucepan and add the garlic.

Cook for a minute and then stir in the flour.

Take off the heat, and add the milk, a bit at a time, making sure that you stir till it is smooth.

Put back on the heat till it thickens and keep adding milk until it is the required consistency.

Add some salt and pepper.

Stir in the cooked, chopped spinach and the cottage cheese.


Stir until it is all coated, and turn off the heat.

Add the rice, and put it in a casserole or oven proof dish (sprayed with oil first) - taste to see if you need more salt.


If using the haloumi, cut it into strips and put on top of the spinach/rice mixture.


Bake in a pre heated medium oven for about 10 minutes, and serve.

I served it with my slow baked fig chicken and for vegetarians, it is also good as a meal on it's own.
