This was a curry made out of fresh salmon.
Salmon is the healthiest of fish, and is also a very tasty one. This meal ticked all the right boxes!
Preparation Time: 10 minutes
Cooking Time: 25 minutes
Serves: 2 - 3
Ingredients
1 piece fresh salmon, skin on (290 g)
1½ tbsp butter
1 shallot, finely diced
1 celery stalk, sliced
About 150 g mushrooms, chopped
1 tbsp curry powder
1½ tbsp flour
1 cup chicken soup - I used home made
1½ tbsp cream
1 tbsp sherry
Few drops lemon juice
Method
Grill the salmon for a few minutes on each side - it does not need not be cooked properly as it will be re-cooked later.
Flake it and discard the skin.
Heat the butter in a wok or frying pan and add the onion. Cook for a few minutes and then add the celery.
Cook for another minute or so.
Add the sliced mushrooms, season and stir in the curry powder.
Cook for about 4 minutes over a low heat.
Add the flour, mix and cook for another 2 minutes.
Pour in the chicken stock and season again. Cook for about 8 minutes over a low heat.
Add the cream and sherry.
Then add the flaked salmon and a few drops of lemon juice.
Mix and cook on low for another 5 minutes or so.
I used Hokkein noodles which I just had to put in boiling water for 5 minutes.
Serve salmon curry on top of noodles, potatoes or rice.
