Creamy Haddock with Buttered Spinach

Haddock is one of the more stronger-flavoured white fish, which, coupled with the delicate creamy sauce, is a delicate, sublime, and yet incredibly healthy.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 2 servings

Half teaspoon Black Pepper
2 Haddock loin fillets
1 Teaspoon cornflour
2 Tblsp Jersey cream
50ml Whole milk
Slices of Spring greens
2 Bay leaves

Required ingredients

Combine the milk with an equal quantity of water in a large frying pan, along with a bay leaf.

Bring to the boil.

Season the haddock fillets with the black pepper.

Add the fillets to the pan of milk, so they're almost submerged, and bring back to the boil.

Simmer the fillets in the milk reduction, for 15 minutes, or until the fish begins to flake.

Reserving the milky 'sauce', transfer the fish to a warm plate.

Chop the greens and set aside.

Strain the liquid into a bowl.

Add the cornflour, whisk until smooth.

Pour the strained mixture back into the saucepan along with the cream and whisk until it thickens.

At the same time add the butter and green to a saucepan of boiling water, simmer for 10 minutes.

Arrange the greens around the base of a warm dish and carefully place the fillets on top.

Pour the creamy sauce on top.
