Creamy Lemon Squares With Homemade Biscuit Base

A tangy slice with a delicious crunchy biscuit base. This lemon slice makes a lovely dessert or treat.

Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 16 servings

1/2 cup butter
1/2 cup icing sugar
1/4 teaspoon salt
1 cup plain flour
4 egg yolks
1 can sweetened condensed milk
3/4 cup fresh lemon juice


Preheat the oven to 180 degrees C and line a slice baking tin.

In a mixing bowl, use an electric mixer to beat the butter, icing sugar, and salt until creamy and pale.

Add the flour, then beat until just combined.

Press the biscuit base crumbs evenly across the slice tin base.

Bake for 10-15 minutes, or until light golden brown. While the base is baking, make the lemon filling.

In a fresh mixing bowl, combine the condensed milk, lemon juice, and egg yolks.

Pour the lemon filling over the biscuit base.

Bake at 160 degrees C for 15-20 minutes, or until just set.

Let the slice cool in the tin, then slice into squares.
