Creamy Polenta with Chicken & Mixed Beans Stew

This is an amazing dish of creamy parmesan polenta with chicken & mixed beans stew. The polenta is creamy and smooth, and the stew compliments the whole dish that makes it a perfect meal for the family.

Preparation Time: 10 minutes
Cooking Time: 60 minutes
Makes: 4 servings

For the Stew
500g chicken thigh fillets, diced
400g canned four beans mixed
2 tablespoons tomato paste
1 cup vegetable stock
1 tablespoon flour
1 teaspoon cajun seasoning
1 tablespoon sugar
dried parsley
salt and black pepper, to taste

For the Polenta
3 cups milk
1 cup polenta
50g butter
50g grated parmesan cheese
salt and black pepper, to taste

Preheat the oven to 220C.

In a bowl, combine the chicken with flour, cajun seasoning, a pinch of salt and black pepper.

Heat 2 tablespoons of vegetable oil in a frying pan and fry the chicken in 2 batches until golden brown. Transfer to a baking dish.

Pour in the vegetable stock, add in the tomato paste and sugar. Bring to the boil.

Pour in the beans on top of the fried chicken.

Pour in the vegetable tomato stock and sprinkle with dried parsley. Bake in the preheated oven for 10-15 minutes.

Meanwhile, heat the milk and 3 cups of water in a saucepan on a medium high heat and bring to the boil. Slowly pour in the polenta while stirring.

Turn the heat to low and continue whisking vigorously for 2 minutes or until thickened.

Remove from the heat and stir with a wooden spoon for 1 minute.

Add in the butter, grated parmesan, salt and black pepper. Stir well.

Remove the chicken stew from the oven.

Pour the polenta on a plate and spoon the chicken stew on top. Serve immediately.
