Creamy potato bake

These creamy potatoes are light and fluffy and a wonderful accompaniment to chicken, steak, pork or fish. The simple flavours make it appealing to the whole family but the creamy finish make it feel a little bit special.



Preparation Time: 10 minutes
Cooking Time: 90 minutes
Makes: 4 servings

Ingredients
1lb potatoes (I always use King Edward)
1oz butter
1/4 pint double cream
1/4 pint full fat milk
Salt and pepper to season

Method
  • Pre heat oven to 150 or 130 centigrade for fan ovens.
  • Peel and rinse the potatoes before slicing very thinly.

  • Dry the sliced potatoes with a tea towel to remove excess water.
  • Arrange a layer of potatoes in a shallow baking dish, season with a little salt and pepper.

  • Add another layer of potatoes and season with salt and pepper.

  • Mix the cream and milk in a jug and then pour over the potatoes. Don't add extra if the liquid doesn't fully cover the potatoes.

  • Add flecks of butter to the top and bake on highest shelf for 90 minutes.
