Creamy Potato Loaf
I often want to make a light meal or something that goes with a meal and yet could be eaten on it's own.
This potato recipe falls into both these categories, is easy to make, and tastes delicious.

Serves: 5
Ingredients
¾ tbsp polenta
450 g potatoes
2 short cut bacon rashers
1 garlic clove, chopped
2 tbsp sour cream
1 tbsp chives, chopped
1 egg
Method
Preheat the oven to 180°/160° fan forced.
Grease a loaf tin, or use baking paper, and sprinkle the polenta into the tin to coat the case and sides - greasing would probably work better for this.
Peel the potatoes and cut any large ones into smaller pieces.
Put them in a saucepan of water and boil for about 15 to 20 minutes or until they are very soft.
Drain and mash the potatoes.
Finely chop the bacon, meanwhile, and add it to the potato mash with some pepper, garlic, sour cream, chives and the egg. Mix well.
Carefully put the potato mixture into the prepared loaf tin and smooth over the top.
Bake for 30 minutes or until it is firm and the top is golden.
Remove the loaf from the oven, and allow to cool.
Remove from the tin, then put in the fridge until required.
Cut the loaf into thick slices, and serve with a salad, or use as an accompaniment to meat or fish. Or you could have it as a light lunch.
