Creamy Potato Loaf

I often want to make a light meal or something that goes with a meal and yet could be eaten on it's own.

This potato recipe falls into both these categories, is easy to make, and tastes delicious.

Preparation Time: 30 minutes
Cooking Time: 30 minutes
Serves: 5

Ingredients
¾ tbsp polenta
450 g potatoes
2 short cut bacon rashers
1 garlic clove, chopped
2 tbsp sour cream
1 tbsp chives, chopped
1 egg

Method
  • Preheat the oven to 180°/160° fan forced.

  • Grease a loaf tin, or use baking paper, and sprinkle the polenta into the tin to coat the case and sides - greasing would probably work better for this.

  • Peel the potatoes and cut any large ones into smaller pieces.

  • Put them in a saucepan of water and boil for about 15 to 20 minutes or until they are very soft.

  • Drain and mash the potatoes.

  • Finely chop the bacon, meanwhile, and add it to the potato mash with some pepper, garlic, sour cream, chives and the egg. Mix well.

  • Carefully put the potato mixture into the prepared loaf tin and smooth over the top.


  • Bake for 30 minutes or until it is firm and the top is golden.


  • Remove the loaf from the oven, and allow to cool.

  • Remove from the tin, then put in the fridge until required.

  • Cut the loaf into thick slices, and serve with a salad, or use as an accompaniment to meat or fish. Or you could have it as a light lunch.
