Creamy Pulled Chicken in Rich Sundried Tomato Sauce
Creamy Pulled Chicken over pasta
Even when you love to cook there are nights you don't have the time or energy.
Thank goodness for slow cookers! Cook once, enjoy a dozen different meals. And this dish is both quick to make and delicious to eat.
Preparation Time: 5 minutes
Cooking Time: 4 hours
Makes: 12 servings
Ingredients
1.5kg boneless chicken
1 onion, roughly chopped
100g sundried tomato pesto (or equivalent chopped sundried tomatoes)
1 x 400g tin tomatoes
1 fresh tomato, cut into large chunks
1/4 cup white wine
2 cloves garlic, minced
1 teaspoon paprika
1/2 teaspoon black pepper
1 teaspoon salt
3 tablespoons plain flour
3/4 cup sour cream
Chopped parsley, to garnish
To serve:
pasta
steamed green vegetables or green salad
Method
Place chicken in your slow cooker first. Whole breasts are fine. I didn't brown mine first but if you prefer, you can brown it in a frypan.
Ingredients for the sundried tomato sauce
Add remaining ingredients except sour cream and parsley. Sprinkle the flour over the top last.
Cook on high for 4 hours. Check after 3.5 hours and if the sauce is too runny, leave the lid off for the remaining half an hour.
Ta da Its ready to eat.
Add the sour cream, then using a fork, gently pull the chicken apart.
Serve over pasta with a generous amount of parsley sprinkled on top, beside green vegetables or a simple green salad.
Enjoy leftovers for lunch or dinner the next day on a bread roll, with cous cous or in a pie.
