Creamy Pumpkin and Bone Soup

I wanted to make a pumpkin soup but not the usual one, so decided to make it "creamy".

I then saw some bones (chuck) that I wanted a few of for my dogs, so bought these and put them in the soup - something my mother used to do in soups!

It turned out a delicious soup - creamy and tasty.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Serves: 4

Ingredients
2 potatoes
Chuck bones -optional
About 300 g pumpkin
1 cabbage leaf -optional
1 tbsp olive oil
1 small white onion, chopped
1 garlic clove
1 bay leaf
2 cups [linkhttp://recipeyum.com.au/economical-soup-with-four-different-uses/ chicken stock]
1 cup milk
1 cup yogurt
Chives, to garnish

Method
  • Peel the potatoes, and pumpkin, and cut them into large pieces.

  • Heat the oil in a saucepan and cook the onion, garlic and bay leaf for about 2 minutes, or until soft. Add the stock, bones, potato, cabbage leaf, and pumpkin to the pan.


  • Reduce the heat to low, cover and simmer for about 20 minutes or until the vegetables are soft.


  • Bamix or using a stick blender, mash this - you could transfer it to a food processor, but I didnt want to wash all this up!

  • Blend until it is smooth.

  • Return to pan if using processor, and add the milk and yogurt.


  • Cook on a low heat for about 5 minutes just to heat it through.

  • Serve with the chives scattered on the top.
