Creamy Pumpkin and Bone Soup
I wanted to make a pumpkin soup but not the usual one, so decided to make it "creamy".
I then saw some bones (chuck) that I wanted a few of for my dogs, so bought these and put them in the soup - something my mother used to do in soups!
It turned out a delicious soup - creamy and tasty.
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Serves: 4
Ingredients
2 potatoes
Chuck bones -optional
About 300 g pumpkin
1 cabbage leaf -optional
1 tbsp olive oil
1 small white onion, chopped
1 garlic clove
1 bay leaf

1 cup milk
1 cup yogurt
Chives, to garnish
Method
Peel the potatoes, and pumpkin, and cut them into large pieces.
Heat the oil in a saucepan and cook the onion, garlic and bay leaf for about 2 minutes, or until soft. Add the stock, bones, potato, cabbage leaf, and pumpkin to the pan.
Reduce the heat to low, cover and simmer for about 20 minutes or until the vegetables are soft.
Bamix or using a stick blender, mash this - you could transfer it to a food processor, but I didnt want to wash all this up!
Blend until it is smooth.
Return to pan if using processor, and add the milk and yogurt.
Cook on a low heat for about 5 minutes just to heat it through.
Serve with the chives scattered on the top.
