Creamy Tarragon and Mustard Chicken

This recipe is a high five for your mouth. The tarragon works beautifully with chicken to give this dish an extra flavour dimension, and it's sure to be a hit.

Tarragon, chicken, creamy, mustard

Preparation Time: 15 minutes
Cooking Time: 35 minutes
Makes: 2 servings

A little oil for frying
2 chicken drumsticks
2 chicken thighs
200g shallots
2 cloves roughly chopped garlic
150ml chicken stock
150ml white wine
1 heaped tsp wholegrain mustard
1 tbsp fresh roughly chopped tarragon
3 tbsp creme fraiche

Fry the chicken, shallots and garlic in a little oil, until the chicken skin is golden, and the shallots starting to soften.
Drain off any excess fat.

Add in the wine, stock, tarragon and mustard. Gently stir to distribute the ingredients, and then cover and simmer gently for 25 minutes.
Check the chicken is cooked thoroughly. It should be tender and will pull away from the bone easily.
Turn off the heat, add in the creme fraiche, and stir through.

This dish tastes great served with rice to soak up the sauce and your choice of fresh green vegetables.
