This is the perfect dish for fish lovers, or for fish haters who want to be persuaded otherwise! The juicy flaky salmon is topped with a rich creamy tarragon sauce, that balances so well with the tangy roasted cherry tomatoes.
2 Tbs olive oil
3 cloves of garlic (minced finely)
1 onion (diced)
1/3 cup white wine
1/3 cup water
approx 7g tarragon leaves (a small handful)
500g Salmon fillets
200g Cherry/grape tomatoes
Preheat oven at 180C. In a pan with half the oil, fry off the onion and garlic. Once cooked through, deglaze the pan with the wine and simmer gently till the liquid reduces to half. Add the cream, water and tarragon and simmer gently till sauce thickens. Season to taste just before serving.
In a baking dish add the salmon and cherry tomatoes, and drizzle over the remaining oil and season with salt and pepper. Bake for approx 15 mins or until its cooked to your preferred liking.
Note- You can serve this with so much- Rice, pasta, salad, or veggies!!! I would recommend serving it with seasoned baked potatoes, buttered steamed greens and a wedge of lemon.
