Creamy Tortilla Mushroom Bake
Layered tortilla bake
This is a recipe that uses tortillas but not in the usual way of a wrap.
It has the tortillas broken up and layered with the turkey mince and other ingredients.
It is quite a rich recipe and I have made the [link mushroom soup] myself instead of buying it.
Preparation Time: 20 minutes
Cooking Time: 40 minutes
Makes: 6 servings
Ingredients
500 g turkey mince
1 shallot, chopped
40 g packet taco seasoning
3 large tortillas
1 can refried beans
1 - 2 cups cheese, grated
150 g [link http://recipeyum.com.au/cream-of-mushroom-soup/ Mushroom soup] or bought cream of mushroom soup
75 g sour cream
Hot sauce (optional)
Method
Brown the turkey mince and onion for about 10 minutes, breaking up the mince with a fork or spoon.
Drain any liquid, add the taco seasoning, and the refried beans.
Preheat the oven to 180°/160° fan forced.
Mix the mushroom soup and the sour cream in a different bowl.
Spray a baking/casserole dish and spread half the mushroom soup mix in the bottom of this.
Break up half the tortillas and spread over this mushroom mix.
Cuttear into small pieces
Put half the meat/bean mixture over this.
Add half of the cheese on top.
Add a bit of hot sauce on the cheese.
Repeat these layers once more ending with the rest of the cheese over the top.
Bake uncovered for about 25 minutes or until the cheese is melted and starting to go golden.
Cut into squares and serve - also great heated up the next day.
