Creamy Vanilla Rice Pudding

Creamy rice pudding is the ultimate comfort food. It's like a big hug in a bowl that your family will remember for years to come.

Preparation Time: 2 minutes
Cooking Time: 25 minutes
Serves: 6-8

Ingredients
1 1/2 cups rice
8 cups milk
1/2 tsp salt
1 cup sugar
2 tsp vanilla esence
ground nutmeg or cinnamon to serve

Method
  • Place the rice, milk and salt in a large saucepan and bring to the boil.

  • Reduce heat to a simmer and cook, stirring for 20 minutes or until rice is tender.

  • Add the vanilla and sugar to the pan and continue stirring until the mixture has thickened. If the mix is too runny, you can increase the heat to help it reduce/thicken.
  • Serve immediately sprinkled with nutmeg or cinnamon.

  • Note: If you prefer your pudding to be less sweet, you can reduce the sugar to 1/4 cup.
