Simple, quick, and easy, these are your basic cupcakes with a bit of Creme Fraiche added to make them extra soft and light. Great to make with the kids, and based on the brands I used, only 69 calories each.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 12 servings

Ingredients
100g wholemeal self-raising flour
50g Truvia sweetener (or caster sugar if you prefer)
50g margarine
50g Creme Fraiche
2 large eggs

Method

  • Pre-heat the oven to 200 & #3872 ;C/ 180 & #3872 ;C fan/400 & #3872 ;F/6 Gas.

  • Cream the margarine with the sweetener/sugar.



  • Beat in the Creme Fraiche.



  • Beat in the eggs one at a time.



  • Fold in the flour.



  • Spoon the micture into cupcake cases.



  • Bake in the oven.
