Ingredients ½ tbsp oil
4 short cut bacon rashers, diced
½ red capsicum, diced
½ cup long grain rice
½ clove garlic
½ cup canned tomatoes, drained and chopped
Bit of thyme
¼ to ½ tsp chilli paste
1 cup chicken stock
10 - 12 raw prawns, shelled and deveined
Preheat the oven to 180°/160° fan forced.
Heat the oil in a wok or similar and cook the onion for a minute. Add the bacon pieces and cook for another few minutes.
Add the red capsicum and cook for about 1 - 2 minutes.
Add the rice and stir-fry for about a minute.
Add the garlic, tomato, thyme and chilli paste. Add salt and pepper to taste and stir.
Add the stock, bring to a simmer, cover and cook in the oven for 12 minutes.
Add the prawns and cook for a further 5 -7 minutes before serving.
