Makes: 4 sides
Ingredients
Roast
1 large sweet potato
4 potatoes
4 carrots
2 tsp olive oil
1 tbsp roast vegetable sprinkle
Dipping sauce
1 cup Greek yogurt
1/4 cup sweet chilli sauce
Method
Peel and chop the carrots, potatoes and sweet potato and place in a large bowl.
Pour over the olive oil and vegetable sprinkle and toss.
Tumble onto a baking tray and bake at 180° for 20 minutes turn the vegetables and bake for another 20 minutes.
The vegetables should be lovely and golden.
Serve as a side dish or eat on there own with the yogurt and sweet chilli dressing.
For the dressing I combine 1/4 cup of greek yogurt w 1 tbsp of sweet chilli sauce per serve.
NOTE:If you don't have 'vegetable sprinkle' add salt, pepper, rosemary, bread crumbs and any other dried herbs you like to the mixture.
