Crispy Bacon Wrapped Chicken Parcels
Wrapping the bacon around the chicken gives it a very good flavour, combined with the filling in these wraps.
I have used mango chutney mixed with pecan nuts as the filling and any fruit chutney would work.
The further in you cut the pocket in the chicken, the more of this mixture you can put inside. BUT you must not cut the edge or the filling can fall out.
I served this with steamed vegetables and it would also be nice with a salad.
Preparation Time: 15 minutes
Cooking Time: 15-20 minutes
Makes: 4 servings
Ingredients
600 g chicken breast
1½ tbsp olive oil
1½ tbsp lime juice
¼ tsp ground coriander
¼ cup fruit chutney
¼ cup chopped pecan nuts
3-4 rashers bacon
Method
Take off any excess fat from the chicken.
Mix the oil, lime juice, coriander, and some salt and pepper in a small bowl.
Cut a pocket into each of the chicken breasts, going as close to the edges as possible without cutting the edge.
Combine the chutney and chopped pecan nuts in a small bowl, and mix.
Divide the chutney mixture into however many breasts you have and fill the pockets.
Wrap the bacon round the chicken as tightly as possible, enclosing the filling. If it is a large chicken breast, you could use two rashers.
Secure with a toothpick.
Lightly grease a frypan and cook over a medium heat for about 5 - 10 minutes on each side (depending on size of chicken).
While cooking, brush more of the lime juice mixture on the chicken, and cook until it is well browned and cooked through.
Meanwhile steam your vegetables or make a salad -I used fresh asparagus, potatoes and baby carrots.
Pour any leftover lime mixture over the cooked chicken just before serving.
Also nice the next day heated up -store in the leftover lime juice for a lovely gravy.
