Crispy Baked Schnitzel
Love schnitzels but hate the pool of oil needed to cook them? Then this recipe is for you. A healthier variation of the traditional schnitzel, this oven-baked option is just as crispy and requires a lot less clean up.

Makes: 7 servings
Ingredients
Veal schnitzels
2 cups fresh breadcrumbs
1 cup plain flour
3 eggs, beaten
Olive oil spray
Vegeta
Method
Preheat oven to 200°C (fan forced), and line two baking trays with baking paper.
Place breadcrumbs and flour in separate plates, and egg in a deeper plate or container.
Season schnitzels with Vegeta on both sides before coating in flour, egg, then breadcrumbs. Make sure to shake off excess flour, egg and breadcrumbs.
Place schnitzels on baking tray, and spray both sides of schnitzels with olive oil.
Bake in oven for 15 minutes.
Turn schnitzels over and bake for a further 5 minutes or until crumb is golden.
Serve with your favourite side.
