Crispy Eggplant Fries

Firm and crisp eggplant fries! A delicious alternative to the classic potato chip that is sure to please. They are amazing on their own with a tomato or mayonnaise sauce or perfect for a side to home made veggie burgers .



Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 4 sides

Ingredients
1 large eggplant
3/4 cup flour
4 eggs
3/4 cup breadcrumbs
1/4 cup grated parmesan
1 teaspoon dried basil
Salt and pepper to taste

Method
  • Cut the eggplant into 'fries'.


  • Get three separate bowls, in one place the flour, in the second place the eggs and whisk, in the third place the cheese, bread crumbs and seasoning.

  • Dredge the eggplant fries in the flour, dip them in the egg bowl and then into the bowl of breadcrumbs, Parmesan and seasoning.

  • Place the eggplant fries on a wire rack on a baking sheet.

  • Bake in a preheated moderate oven until golden brown, about 10 mins.

  • Enjoy hot as a side to homemade burgers with butter bean and basil patties .
