Crispy Honey Chicken

A comforting dish of crispy chicken bites coated in honey, stir-fried with vegetables.

Preparation Time: 15 minutes
Cooking Time: 25 minutes
Makes: 4 servings

500g chicken thigh fillets
1 egg, lightly beaten
1 tsp salt
40g cornflour
2 onions, thinly sliced
2 carrots, peeled, cut into batons
100g snow peas, trimmed, sliced
1/4 cup honey
Salt and white pepper powder, to taste
Steamed rice, to serve

Preheat oil in the deep-fryer or heat oil in a frying pan until very hot.

Cut the chicken into bite-size cubes. Season with salt. Pour in the beaten egg and toss to coat.

Lightly dust the chicken with the cornflour, shaking off any excess.

Deep fry in batches over high heat for 4-5 minutes until crispy, golden brown and just cooked. Remove and drain on paper towels.

Heat the frying pan, add 1 tbsp oil and stir-fry the sliced onion over high heat for 3-4 minutes until slightly softened.

Add carrot and cook, tossing constantly for 3-4 minutes until tender.

Stir in the snow peas and cook for 2 minutes.

Add the fried chicken to the pan, add the honey and toss until well coated.

Remove from the heat and season well with salt and pepper, serve immediately.
