Crispy Polenta Bites with Rosemary and Parmesan

It's crispy on the outside, soft and melts on the inside. This polenta bites makes a great alternative to chips to serve with your main dish. It also makes a great snack for the kids.



Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 4 servings

Ingredients
2 cups vegetable stock
2 cups water
1 cup polenta
3 tsp sea salt
& #8531 ; cup parmesan grated
5 sprigs rosemary
1 tbsp Extra Virgin Olive Oil or enough to drizzle

Method
  • Line a shallow 20 x 20 cm tray with baking paper.

  • Bring the stock and water to the boil, stir in the polenta, continue stirring for 10 minutes until smooth.



  • Add in parmesan and season with salt, remove from the heat and stir.



  • Pour into the prepared tray, leave to set. Cut into square pieces.



  • Preheat the oven to 200°C.

  • Place extra virgin olive oil in a medium fry pan. Heat on high. Fry the polenta squares in batches until golden, then remove and transfer onto kitchen towel. Bake in the preheated oven for 10 minutes.



  • Fry the rosemary sprig in the oil for 2 minutes, remove and set aside.



  • Serve polenta bites with rosemary.
