Crispy Potato Sandwiches

This such a simple recipe but it is so satisfying. Add ketchup, mayonnaise, or mustard to suit your own taste.



Preparation Time: 10 minutes
Cooking Time: 20 minutes (more if you fry the potato in batches)
Makes: 4 servings

Ingredients
3 medium-sized potatoes
2 tbsp vegetable oil
1 tsp salt
1 tsp pepper
8 slices of bread

Method
  • Peel the potatoes and slice them into rounds a few mm thick. You can vary the thickness - you'll just need to cook slightly longer on each side if you prefer them thicker.
  • Put the potatoes into a bowl and toss with 1tbsp of the vegetable oil, salt, and pepper until well coated.



  • Heat the other tbsp of oil in a large, heavy-bottomed pan.
  • Fry the slices of potato in the pan for 5-6 minutes on each side, or until golden and crispy. As you'll only want a single layer in the pan you'll need to do this in a couple of batches.



  • When they're golden take them out of the pan and lay them on a kitchen-paper lined plate to drain off any excess oil.
  • Put them on a slice of bread and spread the other slice of bread with your choice of condiment.



  • Variation: add some cooked onion or mushroom to up the vegetable content of the sandwich, or add some freshly sliced tomato (works well with mayonnaise).
