Crispy Roast Potato Stacks
These are so much better than ordinary roast potatoes and you'll never believe how simple they are to make.
Preparation Time: 15 minutes
Cooking Time: 60 minutes
Serves: 3
Ingredients
500 grams potatoes, washed and peeled
40 grams butter, melted
1 tablespoon parmesan cheese, grated
1/2 teaspoon onion powder
1 tablespoon fresh rosemary or thyme, chopped
1/2 teaspoon salt and pepper to taste
Method
Grease a 6 hole muffin pan with some of the melted butter. Preheat the oven to 190 degrees.
Slice the potatoes into 2 - 3 mm slices with a knife or mandolin.
Place the potato slices into a large bowl with the remaining ingredients and combine well.
Pile the potato slices evenly into the muffin cups to form 6 stacks.
Bake for 60 minutes until golden and the potatoes are tender.
