Crispy Spiced Fried Chicken

Tender and juicy chicken pieces with crispy spiced crumb. This is a perfect treat for the whole family!

Preparation Time: 4 hours 15 minutes
Cooking Time: 15 minutes
Makes: 4 servings

1kg chicken pieces

1 tbsp oyster sauce
1/2 tbsp soy sauce
2 shallots, grated
5-cm piece ginger, grated
2 tsp salt
2 tsp sugar
a dash of white pepper powder

Flour Coating
300g all-purpose flour
2 tsp Italian mixed herbs
1 tsp ground cumin
1 tsp sweet paprika
1/4 tsp five-spice powder
1 tsp salt
black pepper
white pepper

Combine chicken pieces with all marinade ingredients in a bowl. Cover and leave to marinate in the fridge for 4 hours.

Mix the flour coating ingredients in another bowl. Prepare another large bowl filled with water and a colander.

Dip marinate chicken pieces in the flour coating mixture. Press firmly to coat thick layer of crumb coating.

Place the flour coated chicken pieces in the colander. Dip the colander into the bowl of water and quickly lift up to drain.

Dip the chicken pieces into the flour coating mixture again and firmly press to coat another thick layer of crumb coating. This is to ensure crispiness of the crumb.

Heat oil in a deep fryer on medium heat. Deep fry the chicken for 10 minutes. Turn the heat to high and continue to fry for a further 2-3 minutes until golden brown and cooked through.

Place the fried chicken on a wire rack to drain excess oil. Serve.
