The French equivalent of a ham & cheese toastie, croque-monsieurs made their first appearance in 1910 and literally means 'Mister Crunch'. Strangely enough, despite being French it origin (a country renowned for its excellent cheese), a traditional croque-monsieur uses cheese from Switzerland.

When we think of French cuisine, we usually think of fine dining and patisserie, but a croque-monsieur is indulgent comfort food pure and simple.

Preparation Time: 35 minutes
Cooking Time: 6 minutes per toastie
Makes: 2 servings

Ingredients
75g gruyere cheese
60g butter
4 slices of bread
15g plain flour
100ml almond milk
1 egg
2 slices cooked ham
2 tomatoes

Method



  • Grate the cheese.



  • Use 20g butter to spread on one side of each slice of bread.



  • Use a fork to beat the egg and cheese together.



  • Melt the remaining butter in a sauce pan.



  • Stir in the milk and flour.



  • Stir in the cheese mixture to form a thick sauce.



  • Place one slice of bread buttered side down on a frying pan, and pour some of the sauce over the top until it is covered.



  • Place one slice of ham on top.
  • Slice one tomato and place on top of the ham.



  • Put a second slice of bread buttered side up to create sandwich.



  • Fry on each side for three minutes.



  • Slice in Half

  • Repeat the process for the second croque-monsieur.



  • If you have any cheese sauce left over, then throw some leftovers (potatoes, meat, veg) into the frying pan and stir the sauce in for a rejuvenated meal.
