This 30 minute meal has tasty crumbed pork, creamy mash, fennel chips and is a great mid week dinner. The fennel adds a great, fresh flavour.

This can be made lactose and gluten free or low FODMAP if required.

Baked sweet potato enhances the flavour

Place fennel into the bowl, toss in oil, salt, pepper and set aside.
Meanwhile, put the breadcrumbs, parsley, fennel seeds into a bowl. Season with salt and pepper and stir to combine.
Place the eggs and breadcrumbs in two separate bowls side by side.
Dip the pork into the egg and roll in the breadcrumb mixture to evenly coat.

Transfer the pork onto a plate, cover and refrigerate to rest until the sweet potato has been cooking for 20 minutes.
