Crumbled Hreczanyki
Hreczanyki (pronounced hrech-a-NIH-kee) is a type of Eastern European meat patty that is made with kasza. Kasza (also spelled Kasha) is a grain found throughout Eastern Europe. Generally, it refers to buckwheat, but can also refer to any type of grain. In this recipe, the kasza is mixed with ground beef, onions and garlic, but is not formed into the usual patty shape. Instead, it remains as a crumbly mixture that can be enjoyed in a variety of ways. You can eat it as a main course, a side dish, mixed with noodles, or us it as a filling for pierogi/dumplings.

Makes: 6 servings
Ingredients
500g of ground beef
2 cups of beef broth
1 large onion, chopped
1 clove of garlic, minced
1 cup of buckwheat kasza
salt & pepper to taste
All of your ingredients
Method
In a large fry-pan, begin browning the ground beef on a medium-high heat. Chop the beef as finely as possible while it is cooking.
Once the beef is fully browned, add the chopped onion and garlic. Cook until the onion is soft, approximately 5 minutes.
Pour in the beef broth and the kasza. Add some salt and some pepper for flavor.
Stir everything together well and bring to a light boil. Lower the heat and cover the fry-pan.
While cooking, make a pocket in the middle of the mixture to allow the liquid to pool and evaporate
Cook until all the juices are absorbed or have evaporated, approximately 10 minutes.
Place the contents in a bowl. Use a thin spatula or fork to chop up any remaining large bits of meat.
You can either chill the kasza for use later or serve it as a meal or side.
