Crunchy Chocolate Chip Muesli Bars
Crunchy and full of chocolate, these muesli bars have the texture of shop bought bars without all the preservatives and colours.
Quick to prepare and perfect for lunchboxes (if they last that long!)
Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 12 bars
Ingredients
50 g coconut oil
50 g honey
50 g brown sugar
1 tsp vanilla
pinch of salt
2 cups of rolled oats
1 ½ cups of rice bubbles
150 g chocolate chips
Method
Preheat oven to 170 degrees. Line slice tray with baking paper.
Place brown sugar, honey, vanilla extract, salt and coconut oil into a microwave safe bowl or measuring cup.
Microwave until melted together. Times may vary according to your microwave strength. Mine took 1 minute 30 seconds.
In a large bowl mix together rolled oats and rice bubbles. Pour melted ingredients into bowl and mix well.
Allow to cool a little then mix in half of the chocolate chips.
Press mixture firmly into prepared slice tray.
Sprinkle remaining chocolate chips over the top and press in firmly.
Bake in the oven for approximately 30 minutes or until a lovely golden brown.
Before and after
Cool in tin for approximately 10-15 minutes before placing on to a wire rack to cool further. These will become super crunchy as they cool.
When completely cooled cut into slices or rough chunks if you prefer a rustic look.
Stir in an airtight container.
