Crusty Coated Cod
Cod is always my 'go-to' fish if I'm in the mood for fresh, summery flavours.

Ingredients
2 cod fillets
2 slices of nearly stale white bread
5 new potatoes
Half a summer cabbage
1 leek
1 onion
2 chopped garlic cloves
1 tblsp butter
Black pepper
Half a lemon
Half a tsp of parsley
1 sprig of rosemary
Method
Cook the fish first. Season the fillets with all of the seasoning and the garlic. Put in the oven for 10 minutes at 160 degrees/gas mark 3
Place the bread, pinch of black pepper, thyme and parsley in a mixer and blitz until breadcrumbs have formed. Set aside.
Boil the new potatoes in a saucepan of water for 10 minutes.
Chop the leeks and boil for 10 minutes in a saucepan of water.
Remove the fish from the oven and cover in the breadcrumbs mixture and return back to the oven for a further 10 minutes.
Drain the potatoes and add the butter and pepper to the saucepan. Using a masher/fork gently 'crush' the potatoes until all the butter has melted, and the pepper is evenly distributed.
Drain the leeks.
Remove the fish from the oven, potatoes from the saucepan and the leeks and plate up!
