Crusty Coated Cod

Cod is always my 'go-to' fish if I'm in the mood for fresh, summery flavours.



Preparation Time: X minutes
Cooking Time: X minutes
Makes: X servings

Ingredients
2 cod fillets
2 slices of nearly stale white bread
5 new potatoes
Half a summer cabbage
1 leek
1 onion
2 chopped garlic cloves
1 tblsp butter
Black pepper
Half a lemon
Half a tsp of parsley
1 sprig of rosemary


Method
  • Cook the fish first. Season the fillets with all of the seasoning and the garlic. Put in the oven for 10 minutes at 160 degrees/gas mark 3



  • Place the bread, pinch of black pepper, thyme and parsley in a mixer and blitz until breadcrumbs have formed. Set aside.

  • Boil the new potatoes in a saucepan of water for 10 minutes.

  • Chop the leeks and boil for 10 minutes in a saucepan of water.



  • Remove the fish from the oven and cover in the breadcrumbs mixture and return back to the oven for a further 10 minutes.

  • Drain the potatoes and add the butter and pepper to the saucepan. Using a masher/fork gently 'crush' the potatoes until all the butter has melted, and the pepper is evenly distributed.

  • Drain the leeks.

  • Remove the fish from the oven, potatoes from the saucepan and the leeks and plate up!
