Crystallised Papaya
I love crystallised papaya as it appeals to my sweet tooth. I have found, however, that the crystallised papaya fought from the shop can be overly sweet, and therefore ruin the flavour of the actual fruit. I decided to have a go at making my own version at home, and it is just the right level of sweetness. There is something particularly delicious about snacking on it while it is still warm and just out the oven.
Preparation Time: 24 hours
Cooking Time: 3 hours
Makes: 6 servings
Ingredients
2 papaya
300ml water
200g granulated sugar
Method
Peel the papaya, scoop out the seeds, and chop up the fruit.
Dissolve the sugar in boiling water, add the papaya, and then let it simmer for half an hour until it becomes a thick syrup.
Pour the syrup a quarter of the way into a jar, and then fill the jar to the top with the papaya so that the syrup rises up all the way around it.
Seal the jar and leave it overnight.
Drain off the syrup and pat down the papaya with paper towels to remove the excess liquid.
Spread the individual papaya pieces out on a piece of baking parchment and bake in the oven at 100 & #3872 ;C/ 80 & #3872 ;C fan/200 & #3872 ;F/ ¼ Gas for 2 ½ hours until dry.
Allow to cool and harden and then put in a sealable bag or container.
