Cucumber Bread

This recipe came about because I was feeling frugal, I'd just juiced two cucumbers to make a cooling juice, but had quite a lot of pulp left and I didn't want to waste it. So I made cucumber bread! It is refreshing, moist and a little sweet, so a perfect snack on a spring/summers day, Plus, full of the nutritional benefits of cucumber skin!

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 10 servings

Ingredients
The pulp of 2 cucumbers
150g spelt flour
100g caster sugar
100g butter
2 eggs
Pinch of salt

Method
  • Cream the butter and sugar together, add the eggs one by one and combine.
  • In a seperate bowl sift the flour and salt together.
  • Transfer the flour mixture to the other bowl and add the cucumber pulp. Stir, so everything is combined. It should be relatively 'wet' and sloppy.
  • Pour into a pre-greased (with butter) loaf tin and pop in the oven for 30 minutes at 180 degrees (gas mark 4)
  • After 30 minutes the 'bread' should have risen a little and have turned out perfectly.



  • This is a fool proof recipe and can be done by most. Get your children involved and you'll have them munching veggies without even realising it.
