Cucumber Roll Ups with Feta Cheese
I needed something to eat with another recipe I made, so decided to either roll up some zucchini or Continental cucumber slices.
The cucumber won in the end, as I thought the zucchini would go on releasing more liquid than the cucumber.
They were quite difficult to cut thinly as my potato peelers were blunt, so for this recipe a new potato peeler would work best, as the cucumber should be paper thin.
They would also be great as an entre.

Makes: About 15 rolls
Ingredients
1 Continental cucumber
Dill
2 tbsp sun dried tomatoes
8 kalamata olives, pitted
4 tbsp Greek yoghurt
30 g feta cheese
1 tsp lemon juice
Bit of black pepper
Method
Cut the cucumber in half length ways.
Using a sharp potato peeler, slice very long, thin slices of the cucumber.
Put them on a kitchen towel to absorb some of the liquid.
Chop the dill, sun dried tomatoes and olives into small pieces.
Mix the yoghurt, crumbled feta and lemon juice in a bowl.
Add the dill, sun dried tomatoes, and olives to this mixture, add some pepper and mix.
Put one strip of the cucumber on a flat surface and place about a teaspoon of the mixture on the end of the cucumber strip.
Roll up the cucumber strip carefully, trying not to let the filling ooze out the side.
Put a toothpick in each one to keep them firm, and serve.
These can be made ahead, and I served them with my blue cheese souffle.
