Cucumber Sandwiches without bread
How often do you use a cucumber as the star attraction, instead relegating it to a secondary ingredient in a salad or in sushi or dropped into a green smoothie?
These little party favourites use the humble cucumber as the centrepiece. I used baby cucumbers (Qukes) however these sandwiches will work equally as well with Continental or Lebanese cucumbers.
Simply slice the cucumber in half, scoop out the middle and go wild with your imagination with fillings such as goats cheese, capers and smoked trout or pesto, sundried tomato and mozzarella; the combinations are endless.
Cucumber Sandwiches with Goats Cheese, Capers, Smoked Trout

Serves: 4-6
Ingredients
6-8 baby cucumbers
2 tablespoons capers
50g smoked trout
50g goats cheese
Pepper to taste
Method
Slice the ends off each cucumber then using a vegetable peeler, remove the skin.
Peel the cucumbers and slice the ends of each cucumber.
Slice each cucumber in half and use a spoon to scoop out the insides. Set aside.
In a small bowl combine the goats cheese and capers and mash with a spoon or fork until smooth.
Spread each cucumber slice with the goats cheese mixture.
Place the smoked trout onto one of the cucumber halves and season with some ground black pepper.
Prepare the filling and spread onto each cucumber half top with the smoked trout and then sandwich the cucumber halves together.
Place the other half of the cucumber on top of the trout – sandwiching the trout between two slices of cucumber.
Eat immediately or cover with cling wrap and refrigerate until required.
