This Cucumber Sushi With Soy Chilli Sauce is paleo, vegetarian and gluten free and is quick to make. This is a great snack and can be served on platters at barbecues, parties or packed in lunch boxes.

Ingredients
2 continental cucumbers
1 avocado, finely sliced
1/2 capsicum, finely sliced
1 carrot, finely sliced
Wasabi (if required)
1/4 cup soy sauce
2 birdseye chilli, cut finely

Method
  • Cut cucumber into 4cm sections. Use a small spoon to remove the centres so that there is a hollow.
