Cumberland Rum Nicky
The is a dish that originates from the north of England. During the eighteenth century the port of Whitehaven used to offload exotic food from Africa and the Caribbean. These included ginger, sugar, rum, and dates, all of which are brought together in this delicious tart.

Makes: 6 servings
Ingredients
250g pitted dates
1 tbsp ground ginger
30g muscovado sugar
115g margarine
2 tbsp dark rum
6 tbsp water
150g wholemeal flour
Method
Rub 75g margarine with the flour to form a dough (if necessary, add a little water), and then leave to chill in the fridge.
Chop the dates and place in a saucepan with six tablespoons of water.
Put the lid on the saucepan, and allow to stew at a low heat until the dates are softened.
Add the rum and mash the dates.
Stir in the sugar, ground ginger, and remaining margarine until fully combined.
Roll out the pastry dough, and leave about a fifth to the side.
Line a tart tin with the rolled dough, and prick the base with a fork.
Spread the date mixture over the top of the base.
Use the remaining dough to create a lattice.
Bake in the oven.
