Curried Fish Ball Noodle Soup

This dish is great for busy people who want to have a quick and cheap, but yummy, meal. The curry soup is just made from leftover sauce from the Red Curry Sliced Pork & Potato recipe.



Preparation Time: 2 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
10-12 pieces mixed fish balls
1-2 cups leftover curry sauce
4-5 cups water
some fresh tomatoes, diced
2-3 bunches of dried scallop noodles
some Thai mint/basil
some salt



Method

  • Prepare the soup. Put leftover curry sauce into a deep pan. Pour in 2-3 cups of water as per your preference, dilute to a soup.

  • Add in fish balls and bring to boil.



  • Cover and cook for 10 minutes, When all fish balls become larger, It should be done.



  • Prepare noodle. Add 2 cups water to a deep pan, add some salt and bring to boil.

  • Put dried scallop noodles (or whatever noodle you like, dried or fresh) in boiling water, stir and boil until done.



  • Drain, divide and place the noodles to serving bowls.



  • Add in fresh diced tomatoes (or salad leaves) and cooked fish balls, ladle curry soup finally, top with some Thai basil, then serve.
