Curried Honey Mustard Chicken With Roast Vegetables
I needed to make a meal that I could easily give to someone who had a death in the family, and as this is a one pot meal, I decided to do my curry honeyed, mustard whole chickens, and then cut them up.
It is a quick, easy recipe and I only needed the one dish to take along and it is a complete meal for my friends, as it has the vegetables as well as the meat in the one pot.
Preparation Time: 10 minutes
Cooking Time: About 1 hour
Makes: 8 servings
Ingredients
2 chickens
4 tbsp butter
Vegetables of your choice
1 cup chicken soup
10 tbsp honey
4 tbsp curry powder
2 tbsp mustard
Method
Chop the vegetables up and microwave them for about 5 minutes on high.
Melt the butter, honey, curry and mustard -I did this in the microwave.
Put the chickens in a baking dish, and pour the sauce over it.
Baste the chickens and then add the cup of chicken soup and baste again.
Put the slightly cooked vegetables around the chickens.
Cook at about 160° fan forced for about 50 minutes, turning the chickens once during this time.
If they start to get too brown, cover with some foil.
Allow them to cool slightly and then cut up into pieces, rearrange, and put back in the oven for about 10 minutes.
Serve.
This is also good heated slightly the next day or two, and of course halve the sauce ingredients if only using one chicken.
