Curried Mackerel
Healthy, spicy, and satisfying, this curried mackerel has a few surprised fruits to enhance the flavour.

Cooking Time: 6-8 minutes
Serves: 4
Ingredients
1 x 400g tinned butter beans (235g drained)
4 smoked mackerel fillets
50g frozen spinach
50g frozen kale
50g frozen pineapple
1 kiwi fruit
3 tbsp yoghurt
1 tbsp cumin seeds
1 tsp curry powder
1 tsp paprika
1 tsp ginger
1 tsp turmeric
Method
Begin cooking the frozen ingredients in a frying pan.
Dice the onion, peel and slice the kiwi, and add to the pan.
Stir in the yoghurt.
Mix all the spices into the milk, pour the milk into the frying pan, and stir until the liquid starts to reduce.
Drain the butter beans and stir in.
Flake up the macakerel, add to the pan, and cook for a couple more minutes.
Serve with rice or potatoes.
