Curried Mackerel

Healthy, spicy, and satisfying, this curried mackerel has a few surprised fruits to enhance the flavour.

Preparation Time: 10 minutes
Cooking Time: 6-8 minutes
Serves: 4

Ingredients
1 x 400g tinned butter beans (235g drained)
4 smoked mackerel fillets
50g frozen spinach
50g frozen kale
50g frozen pineapple
1 kiwi fruit
3 tbsp yoghurt
1 tbsp cumin seeds
1 tsp curry powder
1 tsp paprika
1 tsp ginger
1 tsp turmeric

Method
  • Begin cooking the frozen ingredients in a frying pan.
  • Dice the onion, peel and slice the kiwi, and add to the pan.
  • Stir in the yoghurt.

  • Mix all the spices into the milk, pour the milk into the frying pan, and stir until the liquid starts to reduce.
  • Drain the butter beans and stir in.
  • Flake up the macakerel, add to the pan, and cook for a couple more minutes.

  • Serve with rice or potatoes.
